Merry Cookiemas… Yule cookies thing… Yulemas cookies?

I have been conscripted… er, invited to join the illustrious ranks of author-cookie geniuses.

I have noticed a sad lack of GF cookies on the now dozens of posted recipes, so I aim to fix that.

You are welcome!

So here is how it works: A well-known, award winning, local writer (Linda Poitvin ) started it all. She posted a cookie recipe and tagged four other authors.

Each of those authors posted a recipe, and tagged four other authors. And so on, and so on.

Linda tagged Marie Bilideau , who posted her recipe, and then tagged Nicole Lavigne , who tagged me.

And now, because of complex math type stuff, I find myself very short of author friends to conscript… er, tag.

Linda started us off with Snowballs. Marie brought us the cookies of Might and Magic. Nicole brought you darkly devious Chocolate Fudge Pomegranate Cookies.

Nicole, being awesome, included a GF variant so I can make these, too!

So, on to my recipe:

Cape Breton Oatmeal Shortbread cookies

(originally from New Celtic Cooking – GF version by moi!)

Yield: 2 dozen or so

Ingredients: • 1 1/4 cups butter, softened • 1 cup brown sugar, lightly packed • 1/2 teaspoon pure vanilla extract • 1 1/2 cups oat flour • 1 teaspoon baking powder • 1 1/2 cups rolled oats • ¼ cup cinnamon-sugar for topping

Directions: Preheat oven to 350°F

  • Combine the butter and sugar in the bowl of an electric mixer (or mix by hand) and cream together well.
  • Add the vanilla and blend well.
  • Add the flour, baking powder and oats and continue to mix until all the ingredients are well incorporated.
  • Turn the dough out onto a lightly floured surface and knead slightly until soft and relatively smooth.
  • Roll out to a 1/4-inch thickness and cut into rounds or squares.
  • Sprinkle with cinnamon sugar.
  • Bake in the oven for 20-25 minutes until pale golden brown.

I cheat and just pat it into an 8″ circle, score it into 12 pie shaped sliced, and cook.  It’ll break along the scores, if they’re deep.

Here, I am supposed to name four new authors, but everyone I contacted either A) was already tagged by someone, B) said no, Or C) ignored me.

Maybe I’ll give you a new GF recipe next week to make up for it.  Maybe a Mayan chocolate cookie.  Maybe a crispy almond cookie.
